Tarte aux fraises façon grand-mere

Here’s recipe for a French-style tarte aux fruits that I have successfully made several times now. Thanks to the pastry that is helpfully sold pre-cut as a round, on baking paper, it’s super quick to make.

Ingredients

  • 4 citrons non traites
  • 60g de sucre en poudre
  • 4 oeufs
  • 80g de creme fraiche
  • 40g de beurre
  • 250g de fraises ou framboises fraiches
  • 20g de sucre glace
  • 400g de pate sablee

Abaisser la pate dans la moule. Couvrir d’un papier sulfurise et verser les pois pour cuire a blanc a 180 oC pour 15 min.

Dans un saladier, melanger le zeste de 2 citrons avec le sucre en poudre. Ajouter les oeufs entiers et battre avec un fouet. Ajouter le jus des 4 citrons, la creme fraiche et le beurre fondu. Bien melanger.

Verser l’appareil dans le fond de tarte precuit et enfourner pour 25 minutes a 180 oC.

Sortir du four, laisser refroidir, demouler et reserver au refrigerateur.

Ajouter les fruits rouges.

Saupoudrer de sucre glace et servir.

Astuce: Vous pouvez remplacer les citrons par deux oranges.

  1. Having eaten this recently, I can confirm that it is a great desert. See the vibrant colour of the tarte, under the fruit? It’s not a camera trick – it really is that radiant. If this was bought at a supermarket, I would suspect food colouring, but it’s not. That colour is from simple unmolested fresh ingredients. You know you’re going to love this dish as soon as you see it. Then the same ingredients that make it look great produce a fabulous gentle zing in your mouth at each spoonful. I think it’s my favourite summer desert.
